Élevage: brewed in the spring of 2017, spontaneously fermented in 500L hungarian oak red wine puncheons whose fermentations had stalled shy of dryness even after eighteen months in oak, racked onto mushrooms in stainless steel for a ten month maceration, blended back with like aged beer from a french oak neutral puncheon
