Élevage: spontaneously fermented in a single 600L demi-muid, topped up with free-run chambourcin grape juice, racked to stainless for bottling after 11 months (the only june wort we’ve ever brewed, as of 2022)
Fruit, etc.: north NJ free-run chambourcin teinturier grape juice (red bled, rare)
Dosage: NJ wildflower honey
