Élevage: spontaneously fermented in french oak chardonnay puncheon, to which 260 lbs of hand-destemmed south jersey young vine chardonnay grapes were added for a six month whole berry maceration, backblended with one and two year old puncheon-raised golden ales
Fruit: 2018 south jersey chardonnay from young vines on sandy soil, hand-destemmed

Dosage: riesling icewine juice (freezer-kept from past vintage for just such an occasion)
