Élevage: spontaneously acidified, then spontaneously fermented and matured in neutralized sauvignon blanc 229L vosges and troncais oak barrels for five months. transferred to 229L angelica barrels for an additional three month refermentation with vidal blanc grape must, followed by one month settling in stainless steel

Fruit: south NJ-grown grüner veltliner, dried on beds of local straw for six weeks in-house, then destemmed and crushed
